Post-op trans porn stars who started their careers after transitioning have almost always been stealth. I think even Ajita Wilson only got outed after her death. It seems to be getting more common in the Brazillian hardcore scene specifically for performers who started out pre-op to continue and grow their fan base as post-op performers after getting bottom surgery, but I think generally trans stars who can keep their trans status secret still do so, so there's no way of knowing the actual number.
