I am surprised to hear you say that you have only had hot maple syrup. I've lived in Canada for 11 years now and have never ever seen that. I would only ever get a chance to eat it at the neighbourhood greasy spoon, but even then, I've never heard of anyone eating it hot. I'll have to try it out for myself.

Weird. Well to be fair, I do heat up all my syrups. I did the Little House on the Prairie thing when I was young and poured warm maple syrup over snow to make candy when we were visiting my GP's in Northern CA, I loved that.

Maybe just me who heats up their syrups. Oh well.
