imagine paying 3000$ in expenses a month with 100$ a client.

From what I see girls who only advertise on Eros didn't get affected by these websites shutting down. If they have established themselves and are used to a certain rate/s why should they cater to the lower-end of clients that are just migrating from backpage ? At the end of the day it's their business as any business has the right to dictate their rates. Just because they are TS's doesn't mean they= cheap.

Seems like the ones who got affected by this and troubled is the girls and guys who relied solely on those sites.

Demand and supply. If some escorts drop out but demand is the same then prices will go up. Most likely there is a drop in both demand and supply (at least temporarily), as both clients and escorts find it harder. What happens to prices depends on which falls more.

Is the old Luchos now a straight bar? And if so, any feedback on the quality of the gg's?
