I'm not a big fan of the casserole aspect, but pheasant is one of the best game birds in my opinion. For anyone who hasn't had it, think of a cross between chicken breast and turkey thigh in taste. I wish I had some now, faisan au vin sounds pretty good.
Pheasant trivia bonus: Iron Chef Masaharu Morimoto recently defeated Chicago chef Paul Virant in Battle Pheasant. I wasn't overly impressed with the battle though, because I believe Morimoto cheats via the use of ninja potions and threatens the judges during commercial breaks.

That's a pretty accurate analogy. I suppose that explains why, before eating pheasant, I'm always compelled to smack it with a dueling glove.

I roast a pheasant a few weeks ago, you have to hang it for a good few weeks.
Recipe for casserole please?
