Three times a year for eight years!!! You lucky bastard... I don't know you personally, but I bet you could write a great memoir on you travels.

I was there in January, and went to Phuket for the first time. What a trip.

My problem is that I've hardly been to Thailand, so when I'm there, I get so sucked into the decadence and debauchery of it all, I feel like I should have done more and seen more when I return home.
I planned on taking at least one cooking class, but never did. I also wanted to go to Vietnam, but never left Thailand.
Oh well, I'll just have to keep traveling there.

Vietnam is pretty cool. I also used Thailand as a springboard for trips to Cambodia, Laos, Singapore, Malaysia and China ... making it up to Tibet also. All brilliant countries to visit (just back from a 2 month in China).
There is a lot more to Thailand than the bar scene. The great street food, massages, temples, scenery and the backstreets of Bangkok are all still exciting and a sensory assault to a Westerner.
At the very least, you should take a 1 hr flight to Cambodia and check that out at some point before it gets too comercialised.

Yes, the street food. I loved it.
And a daily massage. I had a hard time finding establishments that would just give me a massage without the happy ending. I was having sex daily, during the day and night, so I didn't need a hand job at the end. However the women kept insisting. I would say, "I have no power" . Then they'd reply, "No, you strong man, you have power". Then they'd pat on my crouch and say, "Good for you, good for me". "Make you happy, make me happy." When I finally found a place in Phuket that would just give me a massage, it was a great massage. The best during my whole trip.
Man I miss that place...
