Maybe they assume that an escort who has been in the industry for some time has seen and experienced just about everything in terms of her clients, and they just don't want to be embarrassed if they don't measure up in some way. 2 reasons come to mind why people lie
1) the more or less flawed notion that a first timer will somehow elicit a better performance from the escort if she thinks the guy's a virgin.

I myself still haven't had my first time unless you count getting head from a ts girl. I've never had any anal sex either giving or receiving and have never blown a girl either. If on my first time I happen to be good at it I guess it would be because I know what I like having done to me and what feels good for me might feel good for them.
