Being an "escort" is 100% legal. As long as you aren't trading money for sex. Escorting and prostitution are two completely different things. Yes, almost everyone knows that the word escort is used as a cover for prostitution...but as long as a girl and her customer are very careful on what and how they discuss their transaction, then they cannot prove a crime is taking place. If I pay a few hundred dollars to a girl for her time, and we just so happen to have sex, as two consenting adults. That's fine. As long as we don't discuss that the money was for the sex. Sure, the police probably have sting operations a lot, and they might arrest someone, but if nothing illegal was discussed, they'd never be able to prove it in court. Risky, but if you do it right, you will never be prosecuted.
