I was in the restaurant and nightclub business for many years in Manhattan.
The companies I worked for were big
and we took over many old restaurants and bars and after renovating them we reopened them with a fresh new hip menu and theme.
You find the damnedest things on old restaurants ,especially behind the bar.
There was usually a bottle of Dubonnet (red). I had never heard of it.
How do you serve this ? ,I wondered. It was red and sweet but orangey and bitter all at the same time. The bitterness ,I later discovered , comes
from quinine.
Turns out , it's got a rich and noble history. The favorite of Queen Elizabeth II.
If you like gin ,try a Dubonnet cocktail. Great summer cocktail ,complex flavor ,and packs a punch.
