A couple of years ago, I had a Puerto Rican girlfriend that made chuletas that made me want to cry. As many times as I watched her make them I can't get it right, so I'm guessing there's something I'm missing. Here's what I put on them.

Fresh ground pepper
Garlic powder
Sazon con achiote y azafran

fried in hot corn oil

WTF am I missing? I know one of you ladies on the board know how to make them right.

*gets the hotsauce out*

Mi amigo, just defrost them and impregnate them with the ingredients you have posted plus a little "adobo" with pepper.

Just put them in a fry pan with a slight coat of oil, put the pan cover and let it slow fry for some 10 minutes. After that, let it deep fry in medium high to your gusto on both sides and voila...

Have some french fries and,of course, a very cold Corona and have a good life muchacho.

So adobo was the missing ingredient.....

Maybe you'll never get it right! Maybe the missing ingredient was love or lust.

I'm usually not very into magical thinking, but I have noticed that when a woman loves you and cooks for you there is a deliciousness that cannot be reproduced just by using the same ingredients and technique.

I don't think that is what it is. My chuletas just don't taste Boriqua enough. I'll try that adobo next time around though.

Adobo gives it the flavor! be careful its addictive, sometimes I sneak a dab into the eggs or hamburger meat as well, my "secret" ingredient!
