Starting of sentences with 'I think'- which is obviously ridiculous to say as if I am saying it or writing it I think it.

Maybe I should start of with 'It is my opinion that' or 'I believe'

What would you suggest?

most athletes in interviews always start a sentence with "you know". no, i don't know, why don't you say the sentence so i will. just state the sentence of what you think or believe. don't start with it.
by the way, i think that poster is spectacular.

That would be more of an anxiety issue. But it's not really the topic at hand.

I'll gladly let you know when I care to discuss my eating habits.

I think your insight is sexy.

I believe that you are incredibly thoughtful nearly all of the time.

It is my opinion that anyone who makes negative comments about your glorious body-shape, should go play in traffic.

I say all your choices are good. It's better than people who make statements like, "this is the greatest .... ever" and you have to add the "in your opinion" yourself.

You express yourself very well , look great, in my opinion.
