I've had the Grafton 2 year, and it's good stuff, but I'm sticking with the Montgomery Cheddar as the best in that class. That's one hell of a cheese.

But have you had the 4 year old? Sharp enough to shave with....

The best cheddars I've had come from Vermont, upstate NY, and of course Cheddar, England.

I haven't had the 4 year Grafton. Honestly, I'm not very refined when it comes to cheese, yet, but it's become something I'm interested in learning more about.

Some Cheddars I've had that I did not like were Westcombe and Fiscalini San Joaquin Gold. I didn't like those, personally.

I recently had an incredible Bleu D' Auvergne, a little salty and very creamy. Picked it up at the local Whole Paycheck, err, Foods. I also quite like Double Gloucester.

The Bleu D' Auvergne and related ones are a bit of a problem for me. I can't get past the mold thing. I don't want to eat mold, although I've heard it's good in cheese. I suppose I'll have to try it eventually.

Chevre is great cheese. I haven't had domestic, but the French stuff I've tried has been awesome.
