I love all Italian food, but my vote has to go to Lasagne. Done properly, IE any lady making it the way her Italin mother did, and not from a recipe book. My partner is Italin, and makes yummy Lasagne. Her cousin makes it totally differently. It's a dish that is all about what is in the cupboard, and not what written on paper :)

I don't know what the dish is called but this is how I make it.

I soaked Borlotti beans overnight, though you can use tinned beans.

Lightly fry some good quality Italian pork sausages in olive oil in a large pan (about four to six will do depending on how many you are cooking for).

When lightly browned, remove and put aside.

Add some freshly chopped garlic and stir through the oil until browned.
Add one 500gm tin of chopped tomatoes,Borlotti beans and the sausages.
Simmer for about 10 minutes then add some fresh basil, salt and pepper to taste.

Serve in a bowl along with some crusty bread. To add to the flavour drizzle some good quality oil over the sausgage and borlotti mix.

It is a quick tasty dish, but if I can't be bothered then I will get pizza.

We have a huge variety of pizza toppings out here in Australia. Very different to the US, I'm not sure why as we had many Italian immigrants here too. Probably just had to use what they could, or just adapted to the Australian tastes as opposed to more traditional types of pizza.

I'm italian, and live in Italy too.
Many of italian dish in usa aren't really italian... only fake.
I like pasta, better with ragł sauce (i'm very fine to do it...).
Pasta e fagioli (beans).
Lasagne (also know: 'pasta al forno').
Bucatini all'amatriciana (Stunning !)
Spaghetti alla Carbonara.
Etc, etc...

I'm from tuscany (Florence), we're famous for the quality of our meat.
The famous 'fiorentina' (a big steak).
I like a lot duck, too.
We do the best olive oil in the word (the 'extravergine').

Many important, ours 'salumi':
Salame
Salame piccante
Prosciutto crudo (ham)
Mortadella
Culatello
Rigatino arrotolato
Speak
Salcicce

etc, etc...

Too much food to say !

I like Pizza, but our pizza isn't like american... 'base of pizza' is really thin, and really amazing.

Not sure if it would be considered Italian, but I love Chicago Style Deep Dish Pizza. Anybody from LA remember Chicago Pizza Works? That was the best and they also had a ton of different beers.
