This is by no means a perfect chili recipe, but it was pretty damn good.
Blanch 3 tomatoes in boiling water (30 seconds), chill in ice water.
Peel and seed tomatoes, place in food processor
Mince 5 cloves garlic
Chop 1/4th yellow onion
Add to food processor (yes, raw)
Roast 4 red Fresno chiles and 2 green Serrano chiles
Sweat after roasting, peel and seed, add to food processor
(In hindsight, I would have added 1/2 Poblano)
Process and set mixture aside
Dice 1/2 lb sirloin (remove fat) and 1/2 pork loin chop (remove fat and bone, obviously)
Actually, adding the pork bone to the mix while stewing might be interesting, I didn't think of that
Fry beef/pork until browned in small drizzle of soy sauce, then drain
Combine sauce and meat in chili pot
Add:
1/2 tsp Mexican Oregano
1/2 tsp Smoked Spanish Paprika
1/8 tsp Bay Leaf powder
1/2 tsp Chipotle powder
3 grinds black pepper
3/4 tsp kosher salt
less then 1/8 tsp parsley
Add 1 cup water and simmer until diced meat begins to fall apart
Serve with sour cream and good shredded cheddar, oyster crackers are good too, as well as fresh baked bread
Not the best chili I've made, but it's what I made today, and it was pretty damn good.
Don't add beans to a chili, or I'll kill you. Just thought I'd share with the group. Not really on topic.
Oh, this chili gives pre/non-op TS girls huge erections. Heh. Actually, it probably would. It's good chili.
