Actually, this isn't always true. a classic pizza marinara has only tomatoes, garlic and olive oil on it. It was probably given this name because it was eaten by sailors on long sea journeys. As cheese wouldn't keep well, only ingredients that could stay fresh for longer were used. Some people add anchovies but these were not added traditionally.

Here is a recipe:

Sorry for being pedantic, but I'm a food buff.

how would tomatoes stay fresh longer than cheese which can age for pretty much as long as youd like it to?

Cheese, especially fresh or semi-hard mozzarella can go rancid pretty fast without a refridgerator (although hard cheeses can last for a long time outside a fridge).

I'm not sure how long tomatoes can last. But canning has been around for something like 150 years.

Alternatively, another story goes that the wives of sailors prepared the dish for their husbands when they arrived or before the went to sea. Who knows?

You're referring to Pizza Pomodoro, which more often than not also gets some shaved parmesan cheese. I'm not sure, but I suspect that a wheel of good quality parm could easily have withstood the voyage...

PS - you forgot the basil.

I know that I wouldn't have left Italy without it!
